2015 está por terminar y se me ocurrió despedirlo con un delicioso postre inspirado en una de mis bebidas favoritas: el Cosmopolitan, el famoso trago de las chicas de Sex and the City, que se hace a base de jugo de arándanos, licor de naranja y vodka, nada mejor que unos Cupcakes de Cosmopolitan, con esos toques atrevidos del cóctel y la dulzura de la cremita, no solo es una buena manera de despedir el año, si no también de unir dos cosas deliciosas en un solo bocado.

ara hacernos la vida más fácil y más dulce, hice estos deliciosos Cupcakes de Cosmopolitan usando Betty Crocker, así no nos tenemos que preocupar por el postre, ¡ya sabes que van a quedar deliciosos!. Estos Cupcakes de Cosmopolitan son para adultos ya que llevan licor, pero si en tu casa hay niños puedes sustituir las mismas cantidades de licor por jugo de arándano o hacerlos con agua. También puedes dividir la mezcla en dos y hacer una mitad para los adultos y otra para los niños, solo recuerda marcarlas, ya sea coloreando una más que la otra o dejando una sin colorante, así podrás diferenciar los cupcakes a la hora de servir.

El nevado es una parte esencial en los cupcakes, y para hacerlos más especiales utilicé el nevado de Betty Crocker, este nevado de queso crema es muy rico, pero también podrías usar el de vainilla, para darle color solo agregué una gota de colorante rojo directo en el frasco y lo mezclé muy bien. Te doy un tip, si vives en un lugar muy caliente como lo es Villahermosa, guarda tu nevado en el refrigerador hasta que sea el momento de servir tus cupcakes.

Deliciosos y divertidos cupcakes de Cosmopolitan, con los sabores del arándano, naranja y vodka, especiales para la fiesta de Fin de Año.

INGREDIENTES

  • ½ caja de harina Betty Crocker SuperMoist Vainilla Francesa
  • ½ taza de jugo de arándano
  • 5 cdas. de vodka
  • 2 cdas. de Cointreau (licor de cáscaras de naranja)
  • ¼ de taza de jugo de naranja
  • 2 huevos
  • ¼ de taza de aceite
  • 1bote de betún Whipped Queso Crema de Betty Crocker
  • Colorante vegetal rojo
  • Rodajas de limón
  • Capacillos de colores

 

 

PREPARACIÓN

  1. Precalienta el horno a 180ºC.
  2. En un bol combina la mezcla para pasteles junto con el jugo de arándanos, el vodka, el licor de naranja y seguidamente agrega los huevos y el aceite. Por último colorea la mezcla con unas gotas de colorante vegetal rojo.
  3. Coloca la mezcla en partes iguales en los moldes de capacillos, para que tus cupcakes queden de la misma proporción ayúdate con una cuchara de helados, así todos tendrán la misma medida.
  4. Hornea de 15 a 20 minutos o hasta que al insertar un palillo éste salga limpio. Retira tus cupcakes del horno y déjalos enfriar completamente.
  5. Colorea la crema de queso con unas gotas de colorante rojo, colócala en una manga pastelera y reserva en el refrigerador.
  6. Decora tus Cupcakes de Cosmopolitan con la crema de queso y termínalos con una rodajita de limón, ¡yummie!

Let’s honor 2015 before it goes, with this delicious dessert inspired by one of my favorite cocktails of all times: The Cosmopolitan! A cocktail made of vodka, cranberry juice and Cointreau and nothing beats the odds better than a Cosmopolitan Cupcake, with those bold notes took from the cocktail world to the sweetness of the whipped cream, is not just great for party but awesome in joining two yummi kind of flavors into one decadent bite.

To make our life easier, because let’s face it is New Year’s eve and all we want is party, I made these Cupcaketinis using Betty Crocker’s cake mix, you don’t have to worry for the dessert, you already know it’s going to be grand and tasty! These Cupcaketinis are FOR ADULTS ONLY, they’re boozy as no other dessert I made before, but if you have kiddos at home for New Year’s party, you can make two different batches, one with the recipe I’m sharing with you, and the other replacing the vodka and Cointreau with the same amount of water which will be 7 tablespoons of water in the end. Remember to color one batch darker than the other or just color one of two, to fully differentiate between the children’s and the grown-ups cupcakes before serving ;D

The frosting is essential in cupcakes, I used Betty Crocker’s whipped cream cheese frosting, because I love cream cheese frosting and this was just perfect for the cupcakes, you can also use a vanilla frosting! I used only a drop of red food coloring directly into the can to tint my whipped cream cheese and I mixed it up all well. And if you live in a hot humid place like me, reserve your frosting in the fridge before frosting your cupcakes.

Scrumptious and cheeky Cosmopolitan cupcakes, with cranberry, orange and vodka flavors to make the perfect dessert for New Year’s party!

Ingredients

  • ½ box of Betty Crocker® SuperMoist French Vanilla cake mix
  • ½ cup of cranberry juice
  • 5 tbsp. of vodka
  • 2 tbsp. of Cointreau (orange liqueur)
  • ¼ cup of orange juice
  • 2 eggs
  • ¼ cup of vegetable oil
  • 1can of Betty Crocker® Whipped Cream Cheese 
  • Red food coloring
  • Lemon twists
  • Cupcake wrappers

Instructions

  1. Preheat oven at 350ºF (180ºC).
  2. In a bowl combine the cake mix with the cranberry juice, the vodka and the Cointreau, then add the eggs and the vegetable oil and mix. Lastly color the mixture with a drop or two of red food coloring.
  3. Divide the mixture in equal parts into the cupcakes molds, I used an ice-cream scoop to achieve that.
  4. Bake for 15-20 minutes or until a cake tester comes out clean. Off the oven and allow Cupcaketinis to cool completely.
  5. Tint the whipped cream cheese frosting with a drop of red food coloring, transfer to a piping bag and reserve in the fridge.
  6. Frost your Cosmopolitan Cupcakes with the whipped cream cheese and garnish with a lemon twist.

Yield: 10 cupcaketinis

Cook time: 00 hrs. 20 mins.

Total time: 40 mins.
