El pastel de pollo o chicken pot pie, es una de mis comidas favoritas para los días grises, no se si a ti te pasa, pero a mi si, cuando el día está gris y solo se oye el sonido de la lluvia cayendo afuera, no es cuando mas te provoca comer algo reconfortante? algo como hecho por tu mama? una comida casera que se sienta como que te abraza y te arropa? para ese tipo de días, esta receta de pastel de pollo o chicken pot pie, es una de mis preferidas y espero que se convierta en una de las tuyas.

Para hacer esta receta de pastel de pollo (chicken pot pie) no necesitamos mucho, básicamente yo la hice con lo que tenia en mi refri, por lo general cuando hacía esta receta le colocaba un capa de masa arriba y abajo, pero en esta ocasión solo tenia un poco de masa, así que, me toco ingeniarmelas con lo que tenia porque estaba lloviendo y no podía salir a comprar mas nada!

Hay días en en que yo misma me pongo en estos aprietos de ver que cocino solo con lo que hay en el refri y si te soy sincera es cuando invento mis platos más sabrosos.

No se porque pero esta receta es como que te arropa, cuando pruebas el primer bocado es así como si te sintieras automáticamente en casa, esta es una de las principales cosas que me gustan de la comida, de la cocina, que transmite emociones, te transporta, no te pasa a ti o es que yo soy como loca?

La base que estoy usando para hacer el pastel, es una base de cerámica Le Creuset, la puedes conseguir en mi tienda en linea.

Chicken Pot Pie

Un simple pastel de pollo hecho en casa se vuelve un platillo súper reconfortante, para esos dias de lluvia.

Ingredientes

  • 300 grs de masa de hojaldre
  • 1 pechuga de pollo picada en cubos
  • 2 muslos de pollo picados en cubos
  • 1 zanahoria picada en cubos
  • 1 cebolla finamente picada
  • 2 dientes de ajo picados finamente
  • 1/4 de taza de guisantes
  • 1 cubo de caldo de pollo
  • 1/2 taza de agua
  • 1 rama de tomillo
  • 100 grs de champiñones
  • 1 cucharada de fecula de maiz
  • 1/4 de taza de vino blanco
  • 2 cucharadas de aceite de oliva
  • 2 cucharadas de mantequilla sin sal
  • Pimienta al gusto
  • 1 huevo ligeramente batido para barnizar

Instrucciones

  1. Colocar en una cocotte grande el aceite de oliva y la mantequilla, cocina el pollo a fuego alto hasta que este doradito. Incorpora la cebolla y el ajo, seguidamente agrega el vino, el agua y el caldo de pollo. Cocina por 5 min.
  2. Luego agrega el resto de los ingredientes del relleno, cocina hasta que la salsa esté espesa y se reduzca mas de la mitad, deja enfriar.
  3. Calentar el horno a 200ºC. Colocar el relleno en un molde para tarta de 26 cm y cubrir con la masa, pincelar con el huevo y hornear de 30 a 35 min o hasta que la masa esté dorada.
  4. Servir acompañado de una copa de vino blanco.

The chicken pot pie, It’s one of my favorite dishes for gray days, I don’t know if this happens to you, but for me, when the day is gloomy and you only hear the raindrops falling outside, isn’t that the best time for comfort food? Like something made from your mom, a homemade meal that hugs and hold you? For these kind of days, Chicken pot pie is one of my favorites and I hope it becomes one of yours.

To make this recipe of chicken pot pie we don’t need a lot, Basically I made it with what I Had on my fridge, usually when I made this recipe I added a layer of dough below and above, but on this time I only had a small portion of dough, so, I managed with what I had since it was raining and I couldn’t go out to buy anything else!

There are days in which I put myself thru this problems of figuring out what to cook with what I have on the fridge, and if I’m honest with you, this is where some of the most tasty dishes come from.

I don’t know why, but this recipe is Comfy, when you taste the first bite, you feel at home, this is one of the main things I like from food, the kitchen, they bring emotions, they transport you to another time and place, doesn’t this happen to you, or am I crazy?

Chicken Pot Pie

A simple homemade Chicken pot pie becomes a super comforting dish, for those rainy days.

 

Ingredients

  • 300g of puff pastry
  • 1 chicken breast, diced
  • 2 chicken thighs, diced
  • 1 carrot diced
  • 1 finely chopped onion
  • 2 cloves of garlic, finely chopped
  • 1/4 cup of peas
  • 1 chicken bouillon cube
  • 1/2 cup of water
  • 1 sprig of thyme
  • 100 grams of mushrooms
  • 1 tablespoon of cornstarch
  • 1/4 cup white wine
  • 2 tablespoons of olive oil
  • 2 tablespoons of unsalted butter
  • Pepper to taste
  • 1 egg, lightly beaten to glaze

Instructions

  1. Place in a large cocotte the olive oil and butter, cook the chicken over high heat until brownedStir in the onion and garlicthen add the wine, water and chicken brothCook for 5 min.
  2. Then add the remaining filling ingredientscooking until sauce thickens and it’s reduced by more than half, let it cool.
  3. Heat the oven to 200C. Place the filling into a pie plate of 26 cm and cover with the dough, brush with egg and bake for 30-35 minutes or until the crust is golden brown.
  4. Serve with a glass of white wine.

Yield: 1 pie
