Los Cross Buns, hot cross buns o panecillos de cruz, son unos pancitos de pascuas muy populares en europa para esta época del año, por lo general se hacen con pasas y especias, pero como ya sabes a mi no me gustan las uvas pasas en los panes, así que decidí cambiarlas de la receta original y use trozos te chocolate amargo junto con nueces y macadamias. También decidí hacer un experimento y combinar un poco de harina integral a mi masa para así enriquecerla y aportarle un poco de fibra y vitaminas a nuestros panes.

Desde hace tiempo quiero hacer este tipo de pan y pascuas me pareció la época perfecta, aparte me sirvió para sacarme el polvo del viaje y volver a la cocina formalmente jaja, como se debe. Esta masa enriquecida puede parecerte algo laboriosa, pero en realidad es muy noble, el pan queda suave y esponjado con todos esos trozos de chocolate y fruto secos mas las especias, son una delicia para el desayuno o en la tarde noche.

Hot Cross Buns o Panecitos de Cruz o Pascuas, deliciosos panes de masa dulce, rellenos de nueces, macadamias y chocolate. Característicos por la cruz que está dibujada sobre ellos.

Ingredientes
  • PARA EL PAN
  • 400 g de harina de trigo blanca
  • 100 g de harina de trigo integral
  • 15 g de levadura seca
  • 100 g de azúcar rubia
  • ½ ceta. de canela, clavo de olor y nuez moscada
  • 1 pizca de sal
  • 50 g de mantequilla
  • 2 huevos
  • 50 ml de leche
  • 150 g de chocolate amargo
  • 100 g de nueces y macadamias (combinados)
  • PARA LA CRUCES
  • 10 cdas. de harina
  • 6-7 cdas. de agua
  • PARA EL GLASEADO
  • ½ taza de azúcar
  • ¼ taza de agua
Instrucciones
  1. Combina en un bol la harina de trigo integral junto con la harina de trigo blanca, el azúcar, la levadura, sal y las especias, reserva.
  2. En un bol aparte mezcla la leche junto con la mantequilla a temperatura ambiente y los huevos.
  3. Haz un hueco en el medio de la mezcla de los ingredientes secos y agrega la mezcla de leche, ve ayudandote con un tenedor para ir haciendo la masa, cuando veas que ya no puedes más, retira la mezcla del bol y trasladada a un meson cubierto con un poco de harina extra, amasa por unos 10 minutos para desarrollar el gluten.
  4. Traslada de nuevo la masa a el bol y cubrela con un poco de aceite neutro y papel film, déjala que leve por 1 hora o hasta que doble su tamaño en un lugar cálido y obscuro.
  5. Pica las nueces y chocolate en trozos grandes, reserva.
  6. Pre calienta el horno a 180ºC.
  7. Retira la masa del bol y trasladada a la mesa (cubre la mesa con un poco de aceite para que la masa no se pegue) incorpora el chocolate y las nueces a la masa, seguidamente pesa la masa con una balanza y divídela en partes iguales, yo la dividi en 18 bolitas, ya que de esta forma llenaban bien mi molde para hornear de 33 X 22 cm.
  8. Una vez dividida la masa, forma bolitas y colocadas en el molde, yo hice (tres) 3 filas. Deja levar los cross buns otra hora, mientras tanto prepara la mezcla para la cruces solo combinando la harina y el agua hasta obtener una mezcla espesa.
  9. Coloca la mezcla de las cruces en una manga pastelera y procede a pintar lineas verticales y horizontales sobre cada panecillo formando una cruz.
  10. Hornea de 30 a 40 minutos o hasta que el pan este dorado.
  11. Mientras se hace el pan, coloca en una olla el azúcar y el agua, calienta hasta que el azúcar se disuelva y se forme un almíbar.
  12. Al salir los hot cross buns del horno unta con el almíbar, retira de la bandeja y deja enfriar sobre una rejilla.

Estos cross buns son estupendos para comer en el desayuno y no digo que te tienes que despertar a las 3 AM para hornear, bueno yo lo he hecho, el punto es que puedes dejar la masa ya lista, los pollitos formados desde la noche anterior y los guardas en el refrió, a la mañana siguiente estarán levados, solo déjalos que pierdan temperatura y se aclimaten al ambiente y hornea, un delicioso desayuno para disfrutar en familia.

I also decided to do an experiment and combine some wholemeal flour to my dough so it’ll enrich it and bring some fibre and vitamins to our breads….

For some time I’ve wanted to make this kind of bread and easter seemed the perfect time, besides it helped me get me off the travel’s dust and return formally to the kitchen haha. This rich dough may seem like laborious, but it is actually very noble, the bread is soft and fluffy with all those pieces of chocolate and dried fruit, plus the spices,  they are a treat for breakfast or late evening.

Hot Cross Buns


Hot Cross Buns, delicious sweet dough breads stuffed with walnuts, macadamia nuts and chocolate chunks. They are characterised for the cross that is drawn on them.


Ingredients

FOR THE BREAD

  • 400g of white wheat flour
  • 100 g of whole wheat flour
  • 15 g of dry yeast
  • 100 g of brown sugar
  • 1/2 tsp. of cinnamon, cloves and nutmeg
  • 1 pinch of salt
  • 50g of butter
  • 2 eggs
  • 50 ml of milk
  • 150 g of dark chocolate
  • 100 g of walnuts and macadamia nuts (combined)

FOR THE CROSSES

  • 10 tbsp. Of flour
  • 6-7 tbsp. of water

FOR ICING

  • 1/2 cup of sugar
  • 1/4 cup of water

 


Instructions

1. Combine in a bowl the white wheat flour with whole wheat flour, sugar, baking powder, salt and spices, reserve.

2. In a separate bowl, mix the milk with the eggs and the butter at room temperature.

3. Make a hole in the middle of the dry ingredients’ mix and add the milk mixture, go helping yourself with a fork to whet the dough, when you see that you can no longer do this, remove the mixture from the bowl and transferred to a table covered with a little extra flour, knead it for about 10 minutes to develop the gluten.

4. Move the dough again to the bowl and cover it with a little neutral oil and film paper, let it rise for 1 hour or until it doubles in size in a warm, dark place.

5. Chop the walnuts and chocolate into large pieces, reserve.

6. Pre heat the oven to 180 ° C.

7. Remove the dough from bowl and move it to the table (covering the table with a little oil so in that way, the dough it doesn’t stick) incorporate the chocolate and nuts to the dough, then weigh the dough in a scale and divide it into equal parts, I divided it into 18 balls, thus filled my 33 x 22 cm baking pan.

8. Once the dough is divided, make little balls with the dough and place them in the mold, I made (three) 3 rows. Leave the cross buns raise another hour, meanwhile prepare the mixture for only the crosses combining flour and water until it makes a thick mixture.

9. Place the crosses’ mixture in a pastry bag and proceed to paint vertical and horizontal lines on each roll forming a cross.

10. Bake 30 to 40 minutes or until bread is golden brown.

11. While the bread is done, place in a saucepan the sugar and water, heat it until the sugar dissolves and a syrup forms.

12. Right as the cross buns are leaving the oven smear them with the syrup, then remove them from the pan and let them cool them on a rack.

These cross buns are great to eat at breakfast and I am not saying that you have to wake up at 3 am to bake them, well I’ve done it, the point is that you can let the dough ready, the balls formed from the night before and the leaving them in the fridge, in the morning they will have raised, only let them lose temperature and acclimate to the environment and bake a delicious breakfast for the whole family.
